Filter Coffee Is the Honest Order
· 1 min read
If you want to know what a cafe thinks about coffee, order the least profitable thing on the menu and watch what happens.

Milk drinks are forgiving. Sugar and fat cover a multitude of extraction problems, which is why a mediocre bar can serve a perfectly pleasant flat white and why the flat white is what most people order. Filter coffee has nothing to hide behind: it is coffee and water, and every decision shows.
It is also the least profitable item on most menus, which makes it a test of priorities. A bar that offers filter, brews it to order, and can tell you what it is has decided that being good matters more than the margin on that cup. A bar that keeps a jug on a hotplate has made the opposite decision, and the jug has been there a while.
What to notice
Ask what the filter is today. If there is a choice of two, the bar is serious. If it arrives in under a minute it was brewed in advance, which is not automatically bad — batch brew done well and served fresh is excellent — but it should not be stewed, and you can smell stewed coffee before you taste it.
Order it black, at least the first time. Not out of purism: milk in filter is a legitimate preference, but the first cup is the one that tells you whether to come back, and you cannot read the room through it if you have covered it up.
