What Specialty Actually Means

· 1 min read

The word has a technical definition, a trade meaning and a marketing use, and only one of those is on the sign above the door.

What Specialty Actually Means

Technically, specialty refers to green coffee that scores above eighty on a hundred-point scale in a formal cupping. That is a grading system for unroasted beans, applied by trained assessors, and it says nothing directly about the drink in front of you. A high-scoring coffee can be roasted badly, ground badly and brewed badly.

In the trade, the word covers a whole way of working: buying with traceability to a farm or cooperative, roasting lighter to preserve origin character, publishing information about where things came from. That is the meaning most people intend when they use it, and it is visible on a bag if the roaster names the producer, the region and the process.

And the marketing use

On a sign, specialty often means nothing at all. It is a category signal — this is not a chain, we have a good machine — and there is no body checking. The word costs nothing to print.

The way through is to ignore the sign and look for the specifics. A menu that names origins, a bag that names a producer, a person behind the bar who can tell you what changed since last month: those are the properties the word is supposed to point at. Where they exist, the label is redundant. Where they do not, the label is decoration.
