Eggs Are the Benchmark Dish
· 1 min read
If you want one dish to compare kitchens with, order eggs. They are cheap, universal, and impossible to hide behind.

Every breakfast kitchen in the world can put eggs on a plate, which is exactly why they are useful. There is no expensive ingredient to carry the dish, no sauce to cover a mistake, and no way to prepare them in advance. What arrives is a direct readout of how much attention the pass is paying at that moment.
Scrambled is the most revealing. Overcooked scrambled eggs are the default state of a busy kitchen — they keep cooking in their own heat, so getting them right requires someone to pull them early and plate them immediately. Poached tells you about the water and the freshness of the egg. Fried tells you about pan temperature and nothing else, which is why it is the safest thing to order when you suspect the kitchen is struggling.
Reading the plate
Look at what came with them. Bread that has been toasted to order is warm in the middle; bread toasted in advance and held is uniformly dry. Butter at room temperature means someone thought about it. A garnish that is wet means the salad was dressed before the eggs went on.
None of this is snobbery — it is a two-minute test that costs the price of the cheapest thing on the menu and tells you whether to come back for something more ambitious. Do it once at each of the three closest places and you will know, permanently, which of them to send visitors to and which to use when you just need to be fed.
