The Grinder Matters More Than the Machine

· 1 min read

A famous espresso machine in the window tells you what a cafe spent. The grinder beside it tells you what it understood.

The Grinder Matters More Than the Machine

Espresso is water pushed through ground coffee, and almost everything that goes wrong goes wrong in the grinding. Inconsistent particle size means water finds channels through the puck, which means part of the coffee is over-extracted and part is barely touched — the classic simultaneously bitter and sour shot that no machine can fix downstream.

Machines have become extremely good, and the difference between a competent commercial machine and a famous one is smaller than the price suggests. Grinders have improved too, but the gap between a cheap one and a good one is still audible in the cup, which is why bars that know what they are doing spend there first.

What you can see from the customer side

Count the grinders. Two or more usually means separate grinds for different coffees rather than one compromise setting. Watch whether the barista adjusts anything during service — grind settings drift with humidity through the day, and a bar that never touches the dial is either exceptionally stable or not paying attention.

None of this requires you to become an equipment person. It is one glance at a counter that tells you where a cafe put its money, and it correlates better with the drink you are about to be handed than the sign outside, the interior, or the position of the place on any list, this one included.
